Our very first vintage! Harvested from our Upton Bishop vineyard. Seyval Blanc is one of England’s hero grape varieties – never fails to crop even in a tough year, and is disease resistant too.
Seyval is a fairly neutral variety, so takes character in the winemaking. Hence it is an ideal choice for Traditional Method Sparkling (aka Champagne Method) wine, where extended yeast lees ageing brings toasty, nutty notes to the wine.
This vintage has had nearly 6 years of lees ageing, and yet is remarkably fresh, and elegant on the palate. Notes of apple and hedgerow blossom on the nose and palate, with subtle yeasty notes to the finish. Brut in dryness, but balanced between fruit and acidity, and with a long finish.
Pair with seafood, particularly oysters & mussels; salads; goats cheese or creamy risottos.
